Oran loves making bread. He gets to work in the quiet dark of the earliest morning hours, brewing coffee, filling the air with music, and beginning the morning's bread production.
After checking his lists and orders, evaluating the proofing level of loaves in the cooler and planning out his morning, he'll put a bowl on his beloved mechanical scale, find his favorite scoop, and begin the day.
For Oran, being a village baker means tapping into the deep traditions of the craft which stretches far back into the mists of history. It's magical to imbue flour and water with the life of natural sourdough culture and watch it ferment into subtly fragrant bread dough. Once fully fermented and risen into loaves, he'll score them and load them onto the stone oven decks.
And then they will bloom into the nourishing, delicious breads that help sustain our busy lives. Oran feels very fortunate to be a baker in Evanston.
